Spell checking is not done where no syntax group are defined (or found by vim). I find it useful to enable spell checking even for the undefined group (see toplevel in vim’s syntax documentation). To do so, write the command: syntax spell toplevel in the file ~/.vim/after/syntax/tex.vim. Make the file if it does not exist.
Unfortunately, there’s no solution within minted at the moment or for the foreseeable future, sorry. Implementing the breaklines feature is quite difficult. Using listings instead may be your best solution here. Minted now has a breaklines option.
To include png and jpg, you need to specify the Bounding Box explicitly. \includegraphics[bb=0 0 1280 960]{images/some_image.png} Where 1280 and 960 are respectively width and height.
