On any element in Interface Builder you can select the element and hit… Editor > Size to Fit Content (keyboard shortcut: CMD+=) This will do a “sizeToFit” on the selected element. Labels will fit their text size, image view will resize to the image size, etc…

I achieved what I wanted by clicking on a ui element (button, image, text, etc) and going to the Layout menu (at the top of screen) and then I used “bring to front”, “send to back”, etc. In Xcode 4.2 you’ll find the options in menu up top: Editor->Arrange

Select the window in the storyboard, and open its Simulated Metrics property page (upper-right corner, an icon that looks like a shield next to the ruler icon). If the Simulated Metrics group is collapsed, expand it by clicking the black triangle to its left. There you will find an Orientation property; set it to Landscape.
