Thanks to @IanRoberts, I had to use the normalize-space function on my nodes to check if they were empty.
<xsl:if test="((node/ABC!='') and (normalize-space(node/DEF)='') and (normalize-space(node/GHI)=''))">
This worked perfectly fine.
