You just need to add the StringHttpMessageConverter to the template’s message converters:

RestTemplate template = new RestTemplate();
template.getMessageConverters()
        .add(0, new StringHttpMessageConverter(Charset.forName("UTF-8")));
ResponseEntity<Object> response = template.exchange(endpoint, method, entity, 
                                                    Object.class);
